Freezer Cooking

I work in an Accounting office, come January my work life goes into overdrive. Not only that but this last May we bought a house which requires me to commute 45 minutes to work one way. To say I'm stressed about this month would be an understatement. One of my biggest frustrations at home is coming home and having to figure out what to make for dinner. I'm tired and cranky and usually can't think of anything good. I always do much better if  have a plan.

I decided I was going to have to focus and get some freezer meals prepped. I put out a cry for help on Facebook and one of my good friends shared the recipes she uses. I found some other recipes online that I wanted to try and I got started.  I made a grocery list of the items I didn't have on hand and I set off to WinCo with my 12 year old son and my list.  About 2 hours later we were back home. I cleaned up the kitchen and got going.

*Have your kitchen cleaned before starting this! You'll save yourself so much time.

Here is a link to a google doc I made with my process and results:

Next I will be making a menu calendar for the month so I make sure that we actually benefit from my hard work!

Happy Cooking!

December

This was a great December, full of memory making activities!

We made cookies

The kids wrote their traditional letter to Santa and mailed it at the Macy's mailbox.

Great Lego creations were made.

We went to our ward's pajama Christmas Party

Katie helped feed Belle

Logan found an awesome costume for his medieval Bishop role at school (no he didn't use that hat).

Logan's Lego Robotics team competed in their first ever Lego Robotics competition. They didn't win this year, but did extremely well in the timed portion of the event.

We learned that Katie is full of personality and super silly just like her big sister.

The kids in their beautiful Christmas outfits.

We had an early Christmas with Grandma and Grandpa Kinsley here in Tigard and the kids got spoiled as usual!

Then we headed off to Utah for our first Christmas there in a long time! It was really exciting for the kids.

At Grandma and Grandpa Brown's house, having snacks,

getting pulled in the sleds by Grandpa's lawn mower

Lindsay impressed Grandma with her reading skills.

We made gingerbread houses

played games

played with Cute Sophie

Showed Aunt Ashley our reading skills

Went to Temple Square

My kids became Monopoly Deal addicts at the hands of their grandparents.

And of course Christmas Morning, where my cute little bugs got spoiled rotten!

It was a fantastic trip and we are so glad that we went, we can't wait to go again in a couple years!
