Freezer Cooking

I work in an Accounting office, come January my work life goes into overdrive. Not only that but this last May we bought a house which requires me to commute 45 minutes to work one way. To say I'm stressed about this month would be an understatement. One of my biggest frustrations at home is coming home and having to figure out what to make for dinner. I'm tired and cranky and usually can't think of anything good. I always do much better if  have a plan.

I decided I was going to have to focus and get some freezer meals prepped. I put out a cry for help on Facebook and one of my good friends shared the recipes she uses. I found some other recipes online that I wanted to try and I got started.  I made a grocery list of the items I didn't have on hand and I set off to WinCo with my 12 year old son and my list.  About 2 hours later we were back home. I cleaned up the kitchen and got going.

*Have your kitchen cleaned before starting this! You'll save yourself so much time.

Next I will be making a menu calendar for the month so I make sure that we actually benefit from my hard work!
